Chilled Spicy Black Sesame Noodles

Rich, nutty, savory, and just a little spicy, these chilled noodles are one of our favorite ways to use Wadaman's Organic Black Sesame Paste. The sauce comes together in minutes, making this an easy weeknight meal that feels far more special than the effort required. Adjust the rayu to your taste, or leave it out entirely for a milder version.
Ingredients
- ⅔ cup Wadaman Organic Black Sesame Paste
- ½ cup Suehiro Ponzu Sauce

2½ teaspoons Rayu Chili Sesame Oil
- 4 packs fresh ramen noodles
- 4 scallions, sliced super thin (garnish)
- Freshly ground black pepper (garnish)
- Wadaman Roasted Salty Black Sesame Seeds, lightly crushed (garnish)
Directions
In a medium bowl, mix the sesame paste, ponzu and rayu. Add more rayu if you like it spicier. Cook the ramen noodles using the manufacture’s directions, chill briefly under cold water, and then dunk into ice water for 30 seconds. Drain thoroughly.
Toss the noodles in the sesame mixture until they are well-coated, then divide them onto four plates. Garnish with the scallions, black pepper and lightly crushed salty sesame seeds.
