Iio Jozo pickling vinegar is something from another world because it is so simple to use, but the results are divine. Here is how to use it, cut vegetables, put in resealable bag, add vinegar, 24 hours later, pickles! Note: you can reuse the pickling vinegar multiple times, although you may have to add so fresh pickling vinegar after pickling items with high moisture content, like cucumbers.
Place your cut vegetables into a resealable bag or a container with a lid and add the pickling vinegar. Using resealable bag, press all the air out. If you are using a container, you will need to shake the vegetable-vinegar mixture at least few times during the 24-hour period. Place in refrigerator for 24 hours and then they are ready.
