This recipe is for sushi rice used for Temaki, Inari or Chirashi sushi. Seasoning the rice is basically up to your taste. I like a very light vinegar flavor, but feel free to adjust to your liking.
12 ounces Japanese rice, uncooked
2 ounces Iio Jozo Sushi Vinegar
Cook the rice using a rice cooker or on the stove, making sure the rice is not overcooked. Add the cooked rice to a deep bowl and sprinkle the sushi vinegar all over the rice while gently folding using a rice spatula. Keep warm and serve as desired.
