Made by Miwa Yamakatsu, these exceptionally delicate somen noodles are among the finest we've tasted. Yoshino kudzu starch gives them a wonderfully silky texture and remarkable smoothness. Whether served chilled or in a warm broth, they deliver an elegant, satisfying bowl every time.
Cooking Instructions: Bring plenty of water to a rolling boil (about 10 times the weight of the noodles; for example, 500 ml of water for 50 g of noodles). Add the noodles, stir gently with chopsticks, and cook for 1½–2 minutes. Drain immediately, rinse under cold running water, then plunge into ice water for 60 seconds. Drain well before serving.
