We’re very excited to offer our friend Nancy Singleton Hachisu’s The Art and Craft of Japanese Cooking: Artisans, Chefs, Recipes. In this deeply personal book, Nancy draws on decades of life in rural Japan to introduce the chefs and artisans behind the country’s regional food traditions.
This edition is a fully revised and expanded version of her earlier Food Artisans of Japan, thoughtfully updated and republished by Tuttle in May 2026. Every recipe has been carefully retested and refined for the home kitchen, making this the most complete and usable version of the work.
Inside are 140 recipes from seven remarkable chefs, blending classic and modern approaches with subtle French and Italian influence. The dishes are refined but approachable, all tested for the home kitchen.
Nancy also shares thoughtful essays on the producers and ingredients that shape Japanese cuisine, from miso and soy sauce to umeboshi and sea greens, adding depth and context to every recipe.

Nancy Singleton Hachisu
Nancy Singleton Hachisu is a native Californian, Stanford graduate married to a Japanese farmer and has lived in rural Saitama since 1988. Author of: Japanese Farm Food, Preserving the Japanese Way, Japan The Cookbook, Japan The Vegetarian Cookbook, and The Art and Craft of Japanese Cooking. Hachisu’s work has been translated into French, Italian, Spanish, German, Portuguese, Dutch, Chinese, and Japanese.
Nancy appears frequently in Japanese media, documenting her preserving and farm food life as well as visits to artisanal producers in more remote areas of Japan to advocate for Japan’s disappearing food traditions. Recipient of a James Beard award, she has written for The Art of Eating, Lucky Peach, Saveur, Food & Wine, Travel & Leisure, National Geographic Food, BBC Travel, and Fool Magazine.
Nancy also assisted on and appeared in the "Salt" episode of Netflix’s runaway hit: Salt, Fat, Acid, Heat.
