Quick Ponzu

Traditional ponzu is a deeply flavorful citrus-soy sauce that is often aged for months. This streamlined version, adapted from Hiro Sone, delivers bright, balanced flavor in just minutes. Keep a jar in the refrigerator and use it anywhere you want a burst of acidity and umami—drizzled over sashimi, beef tataki, grilled vegetables, dumplings, or even whisked into mayonnaise for an instant dipping sauce.

Ingredients
- ½ cup lemon juice

1 cup Iio Jozo Pure Rice Vinegar

¾ cups Yugeta Organic Soy Sauce
- ¼ cup mirin
- Zest of 1 lemon
Directions
- Combine the lemon juice, rice vinegar, soy sauce, and mirin in a non-reactive saucepan.
- Bring to a boil over medium-high heat, then remove from the heat and add the lemon zest.
- Let steep for 5 minutes.
- Strain, cool completely, and refrigerate.
- The ponzu will keep for up to 1 month in the refrigerator.
