Sushi Vinegar Rice

For temaki, inari, and chirashi sushi, the rice is just as important as the toppings. This simple seasoning method highlights the clean, balanced flavor of Iio Jozo Sushi Vinegar without overpowering the rice. I prefer a lighter touch, but feel free to adjust the amount of vinegar to suit your taste.
Ingredients
- 12 ounces Japanese rice, uncooked

2 ounces Iio Jozo Sushi Vinegar
Directions
Cook the rice using a rice cooker or on the stove, making sure the rice is not overcooked. Add the cooked rice to a deep bowl and sprinkle the sushi vinegar all over the rice while gently folding using a rice spatula. Keep warm and serve as desired.
