This very special organic barley miso from Yamaki Jozo is aged from 8 to 12 months depending on the season in which it is made (miso ages slower in colder months). The gentle aging and Yamaki Jozo’s commitment to sourcing quality ingredients gives this miso a wonderful umami aroma reminiscent of caramel, as well as a pleasantly funky/nutty flavor with a nice salty finish, making this soft miso perfect for miso soups, nabe dishes, stews, dressings, desserts, etc.
Keep refrigerated.
Ingredients: water, organic soybeans, organic barley, sea salt, koji (contains: soy, wheat)
Shipping Notes: The miso is shipped with a cold pack to keep it cool during shipping. It is fine if the cold pack melts in transit, just place the miso in the refrigerator upon arrival.
