Yamaki Jozo blends sun-dried ume (Japanese plums) with their brown rice miso and brown sugar to make this beautiful miso. It has such a delightful combination of sweet, sour and salty flavors, with a floral aroma and lovely miso notes. Use as a dipping sauce or brushed on grilled chicken or vegetable dishes. It is also delicious as a spread. Yamaki Jozo suggests using like a jam and spreading a thin layer on bread to make a nice plum-flavored "miso bread". When we first tasted it, we were blown away because it kind of reminded us of an apricot jam. Greg thinks it would be amazing in a thumbprint cookie.
Keep refrigerated.
Ingredients: rice miso (soybean, rice, salt), ume (Japanese plum), sugar (contains soy)
Shipping Notes: The miso is shipped with a cold pack to keep it cool during shipping. It is fine if the cold pack melts in transit, just place the miso in the refrigerator upon arrival.
