  • Jizai Dougu Cutting Boards are each made from a single piece of rare Gingko wood, which is gentle on knives, self-healing with water, quick-drying, and has natural antimicrobial properties. These lightweight cutting boards are great for cutting produce, meats, fish, etc.

    What follows are Jizai Dougu’s Care and Usage Instructions translated from the original Japanese:

    • Do not put in the dishwasher.
    • After cutting meat or fish, sprinkle salt or cleanser, wash thoroughly with a scrubbing brush, and rinse with lukewarm water. Wipe thoroughly and place it upright to dry.
    • If it is used lightly, wipe it with a tightly wrung dish cloth.
  • The Jizai Dougu collection of products was started in 2004 by Michiko Matsuda, a renowned cooking teacher and author of over 50 of cookbooks in Japan. Working in conjunction with artisan craftsmen across Japan, Matsuda-san has designed these products to incorporate the vast knowledge she has gained over the past few decades.
