Iio Jozo takes their exceptional Purple Sweet Potato Vinegar and adds honey to soften its bright acidity with a gentle sweetness. Made from Japanese purple sweet potatoes that are first fermented into sake, then transformed into vinegar through traditional fermentation and aging, it has an earthy, tart, and subtly sweet flavor with remarkable depth. Enjoy it diluted with still or sparkling water, or use it in shrubs, vinaigrettes, cocktails, and marinades.
