To make this incredible Yuzu Ponzu Soy Sauce, Yugeta-san blends his soy sauce with yuzu, mirin, dashi, salt, and sugar. It has a beautiful floral citrus flavor and aroma that is perfectly balanced by the shoyu, katsuobushi and konbu to make a delicious condiment. We fell in love with it the first time we tried it. What makes it so unique is its yuzu-forward flavor. Most Ponzu Sauce is made with a blend of more than one citrus. For this one, Yugeta-san uses only yuzu. Perfect as a dipping sauce for shabu-shabu, in salad dressings or mayonnaise, with raw fish, or grilled meat.

Yugeta Shoyu has been making soy sauce since 1923 just outside Tokyo in a village called Tawame, Saitama Prefecture. Today the company is run by fourth generation Mr. Yohichi Yugeta, who is keeping alive traditional shoyu (soy sauce) making. Yugeta Shoyu’s soy sauce is brewed naturally and uses only Japan-grown wheat and soybeans.
